I love contests and online challenges that rally a response. I found out that @bandbsaroundtheworld has a 30 day challenge for the month of April for bed and breakfasts.  I missed yesterday’s that highlighted Inn Mascots (sorry Earl & Chubby) but I plan to join for the remainder of the month.

Today’s challenge is a Shareable Recipe. Here’s a simple one packed with protein and a bit of carbs to get you going for the day. Bonus: you can eat it with proper utensils (ie fork and knife), or pick it up and eat on the go!

Avocado Toast with Pizzaz

1 piece of bread (I also make fresh bread and toast it)

1 ripe avocado

Handful of tomatoes (I had grape tomatoes on hand)

1 egg (farm fresh or not)

Sea Salt

Freshly cracked pepper

Lime Juice

Place bread in toaster to your desired crispness. Or broil it in the oven for 2-3 minutes. 

Take the avocado and roughly mash it up in a bowl. I prefer chunks of avocado in mine. Then add lime juice squeezed from half a lime.

Chop your tomatoes and drive a bit of olive oil on them, toss.

In separate skillet, prepare the egg the way you like it. In the picture, its fried, but you could do sunny side up, poached, or even scrambled. Your choice!

To assemble:

Fried egg topped with chopped tomatoes laying on a piece of toasted bread covered with avocadoPlace your toasted bread on a plate. Spread the desired amount of avocado on the toast. Sprinkle some sea salt and cracked pepper on the avocado. Place your egg on top and decoratively add your chopped tomatoes. Viola it’s done!

Options:

Sometimes I take the heat up a notch and add cayenne pepper to the eggs while they cook and then add slices of jalapeños.
